Meet the Dietitian

Christina Melancon, MS, RD, CAT is a Registered Dietitian who supports students through college dining, campus wellness, and food allergy guidance. She works with students to help navigate special dietary needs, food allergies, nutrition concerns, and everyday wellness goals so they can feel their best and thrive on campus.

Christina enjoys helping students make dining choices that fit their lifestyle and providing practical nutrition support that feels realistic and approachable. She promotes wellness across campus through events, educational programs, outreach, wellness fairs, social media, and opportunities for students to learn more about nutrition in a fun and engaging way.

Whether students are managing food allergies, looking for healthier habits, or just have questions about nutrition and dining on campus, Christina is happy to help and welcomes your questions and conversations to nutrition@salve.edu.

We want to meet one-on-one with anyone who has special dietary needs to ensure your dining experience is safe, satisfying, and social.

We encourage those with medical dietary restrictions to contact Student Accessibility Services to document needs for housing and/or dining accommodations. Student Accessibility Services.

Our menus provide “contains” statements specifically highlighting the major nine allergens defined by the U.S. Food and Drug Administration (milk, eggs, shellfish, fish, tree nuts, peanuts, wheat, soy, sesame) and gluten. For Miley Café, you may check for the presence of allergen-containing ingredients prior to planning meals using the online menu tool on our Salve Dining website. This information is also posted on menu boards in the dining center.

Menu items are prepared using standardized recipes and food preparation procedures; however, there may be a risk of cross-contact on shared surfaces and equipment. Please communicate your food allergy concerns and dietary needs to the dining services manager or supervisor on duty to ensure safety.

Simple Zone

Made Without

Simple Zone is a self-serve pantry-style area, providing items such as breads, cereals, baked goods, and condiments made without gluten, peanuts and tree nuts to help students access convenient, safe foods to supplement their dietary-restricted meals.

The area also offers a salad bar and a hot bar with items prepared without gluten, tree nuts or peanuts. The hot bar menu rotates daily and includes a variety of protein such as chicken, beef, lentils; starches like potato, quinoa, and rice; and fresh-prepared vegetables.

Simple Zone is open during all meal periods and is accessible by card access. Students may request access by completing the Simple Zone Request Form.

Plant-Forward Dining

Salve Dining provides a variety of vegetarian, plant-based, and vegan options on campus. Look for these icons on our menus.

Vegan Logo Vegan: Dishes that do not contain any ingredients that come from animals.

Vegetarian Logo Vegetarian: Dishes that do not contain meat or fish but may, or may not, contain dairy, eggs, and/or honey.

PlantBased Logo Plant-based: Plant-based meals only use ingredients from plants such as fruits, vegetables, whole grains, legumes and nuts. They may also include honey and sugar.
